My a.d.d. addled mind cannot comprehend basic wiring instruction. Can someone tell me where to cut, splice and plug? I have a basic understanding, just seems to be more wires than what diagram asks to address. Just converting freezer to keezer. Thanks!

There are a couple of ways to do this. One way is to plug the freezer into an ac outlet in a box that is wired to the STC ( And the box is plugged into a wall outlet). The other way is to plug the freezer into a wall outlet and "hard wire" the STC control into the freezer. Which one do you want?
 
Connect the 2 "temp control" wires (green is a ground, not needed for STC) to terminals 7 & 8 on the STC 1000, no need to worry which is which as it's only a switch. You may have to extend those wires to reach.

Connect STC 1000 terminals 1 & 2 to a power cord, connect the STC 1000 probe to 3 & 4, and you are ready to roll.

OR you can get the power for terminals 1 & 2 from the freezer and not need another cord. The 'smooth' wire from the temp control is the 'hot' lead from the power cord, so you could connect that to terminal 1 AND 7, then run another wire from the "ribbed" wire (neutral) at the power cord (inside motor connection box, but NOT the ribbed wire from temp control) to terminal 2. Terminal 8 is the other wire from the temp control (also ribbed?).

Double check the 'smooth' and 'ribbed' wires on the temp control to be sure that 'smooth' is connected to the 'smooth' at the motor. If not what ever one is connected to the power cord smooth wire is the one you want on term 1 & 7.

Ok, so I'd like to hard wire and not use separate cord. So with that.. Existing thermo cord will go to terminal 7-8, 110 power supply goes to 1-2, where does power out of stc go to on freezer? Does that make sense? I think I'm making this way harder than need be. And thank you very much for your help.
