So in a haste to brew my next batch, I moved my Imperial Pale from the bucket to the carboy after 6 days instead of 7. Much to my dismay, the krausen was slipping (could see the ring where it 'was') but had not fallen in yet. I racked anyway because I needed the bucket and now I've got krausen again in my secondary. I was planning on leaving it for 2 weeks in the carboy, but thought sitting on all that junk might not help cleaning it up.

Should I move to tertiary fermenter after krausen #2 has fallen in?

I don't think one day will make that much difference. If you let it go two weeks in the secondary, it should be fine. I don't think you'll end up with very much debris at all, and no matter clean it is, you'll get sediment in the bottles from yeast anyway. I wouldn't worry about it.

Leave it in the clearing tank until it clears. I don't think you'll need to rack a second time.

Sounds like you need more equipment.

Whatcha gonna do wit all that junk, all that junk inside your trunk..

ah, screw it. You'll be fine. :drunk:

Actually, I just got a TON of equipment. The problem is, I'm not ready to use it. I'm also concerned about primary in a glass carboy, as I don't want hot wort to blow the thing up in my kitchen, so I just use the plastic bucket.

Could have used the bottling bucket for the second batch I guess....but damnit I just wanted to see how the Imperial was coming along.

For those of you who read my previous posts about the first brew smelling like crap...this thing smells of heaven. If this beer tastes half as good as it smells, I'll be trying to make 15 or 20 gal batches just to keep enough around to drink. I may never go to the bar again.

Everything will be okay. On my second brew the bubbles slowed down dramatically after 5 days, so I thought I'd rack it early. After I sanitized everything and opened the fermentor I could still see a pretty healthy krausen on top. Well, I didn't want to waste the time I'd put into sanitizing everything so I racked it anyway. When I got to the bottom there was no yeast, only hop trub. Within 15 minutes the secondary had a nice krausen and the airlock started bubbling away. Obviously, it wasn't done fermenting and I racked way too early. I took a case with me to our Thanksgiving party and got rave reviews. It turned out to be a very nice beer - unfortunately too nice 'cause it's all gone.

You've got a TON of equipment but no wort chiller?

That should be next on your list my friend... how do you chill your wort?

well, let me say that I just got my CFC this weekend. Since I've been doing small batches up until then, I've been using cold water injection and an ice bath. My 5gal kettle doesn't have a spout, but my 14gal one does. So when I start making the big 10gal batches I can chill that way.
