I'm brewing the Bananas Foster Creamy Ale and while I may not add as much rum to it, he'd said that by the time it was done it came out around 9%.

This being my first time making a yeast starter - WLP001- I had boiled 1cup of light DME with a quart of water and put in a growler with an airlock for 24+ hours, stirring occasionally.

I had an OG of 1.060 then added 2 cups of Brown Sugar I had forgotten in the boil. If my math is right that would bring it up around 1.069. Also I had decided to use pectic enzyme when I add the banana but have to wait to order it and for it to get here so by the time I add Bananas, pectic enzyme it will have had over 2 weeks (possibly closer to 3) in primary before I'll rack to secondary.

My question is - should I pitch another starter when I secondary to the banana, pectic enzyme, rum and vanilla beans? If I'm going to be that high in gravity wouldn't it be best to just go ahead and wait it out with what i got in now, then pitch another starter when i secondary, or is there any good reason *not* to pitch more?

Since I have the yeast sample and stuff to make it, it just seems like the safe route to me, but any advice, as always, would be greatly apprecited.
