This time I wanted to experiment with some other hops, and a slightly more interesting, subtle grain bill. Partial Mash.

5 lbs 2-Row
.5 lbs Munich
.5 lbs Carastan (Bairds)
3 lb light DME
1 lb Cane Sugar

.5 oz Warrior or Galena at 60 min
.5 oz Mosaic at 15 min
1 oz Amarillo at 15 min
.5 oz Mosaic at whirlpool
1 oz Amarillo at whirlpool
1 oz Centennial at whirlpool

4.5 to 4.6 Gallon batch
Estimated OG 1.071

As I'm new to these hops, I'm making an guess here as to which would work well together from what I've seen online.

Forgot to get Citra. Couldn't find any Galaxy right now.

Wondering if there would be much difference between using Warrior or Galena as the bittering hop? (something in the back of my mind is tugging toward the use of Galena)
 
I would personally swap the amount of Mosaic and Centennial because I'm a huge fan of Mosaic. I haven't used that combo personally, but it should be pretty tasty. You might also think about adding a dry hop, see how you like it once fermentation slows down.

You won't notice much between Galena and Warrior at 60 minutes, depending on the AA% of the crop of each that you got. As long as it's within like 1-2% of each other, I wouldn't stress over it too much.
 
I wanted to go with more Mosaic, but there was only 1 pack in the store!

What about just using the whole ounce at Whirlpool.. is that a good way to get the most out of it?

I can probably get some more in time for the dry hop.
