I'm thinking of turning my stainless kettle into a Ferment-in-a-kettle system (= ferment in the boil kettle).

As you can see on the picture, is has 4 clips that allow for a decently tight closing.

I have a couple of questions about this project:

As I would probably have a hard time finding the right rubber for this kettle, do you have any recommendation for an improvised seal? What about a bike inner tube or maybe just tape around the lid?

If I want to avoid drilling a hole for the bubbler in the lid for this first (and maybe last) Ferment-in-a-kettle experiment, do you see any solution that would allow the CO2 to escape from under the lid?

By the way, as there will be a decent flow of CO2 from the inside out for at least 2 weeks, what about just leaving the lid on, without any joint or bubbler, and assume the slight CO2 flow from the inside out will prevent bacteria from making it into the fermenter?
