This will be my third brew with my 10 gallon Spike kettle. I'm doing a kolsch tomorrow. Two brews now I have had a little scorching problem. About half a playing card worth. I try to add most of the extract late and stir like mad. Any tricks out there to help with this problem.

Turn the heat way down and/or take the pot off the burner. Then as you already did = stir like mad. Then stir more to make sure.
 
make sure your pot is squeeky clean as well. Any leftovers can easily burn. I use a electric keggle and I didnt clean my elements once. It tasted like a burnt ashtray on my next brew day. Dumper!
 
For extract brews,I use DME in the partial boil for hop additions. LME at flame out covered to steep 15 minutes. It's still plenty hot enough to pasteurize,which happens about 162F. The wort still being 180F+ will do the job.
 
Very good. No scorching this time. I finished the boil and stirred in the extract. Dropped the wort chiller in and chilled. Started into the fermenter when I had realized what I had just done. Everything back into the pot with the chiller this time for another 15 minute boil. Chilled again and into the fermenter this time. I usually forget one step like forgeting the OG or last time I switched the hop schedule. This time it was a biggy. So, it won't be exactly like the last time I brewed this recipe. Who knows maybe I've stumbled on to some long lost Belgian brewing technique and it will be better this time. I think I have discovered my problem. With the chiller being in the pot it is difficult to stir the extract into the wort effectively.
