Brewing an 5.5 gallon IIPA yesterday and seemed everything was going along very well. Hit my OG within .02 but as I emptied my kettle I noticed that where I had sit my hop strainer/spider for FWH it had scorched hop pellet debris underneath. I normally brew 10 gallon batches and am able to move the strainer to the side of the kettle once the depth of wort gets high enough, but with 5.5 gallons I left in on the bottom. The bottom of the strainer has approx. a 1/2 gap between the bottom and the actual kettle bottom, so I assume it is where powdered hops filtered through and scorched. I didn't notice any of the scorched material making it into the fermenter.
I haven't noticed any off smell from the wort or from the fermentation, but again this is an IIPA.
Any thoughts on how this will turn out?
 
It'll be interesting to see. I suppose that the pellet hop dust transferred through the screen and was held in place by the strainer causing it to scorch. I do stir my hops within the spider for better utilization.
I'll be dry hopping this weekend and will try a taste before I do. If I can taste the burned, I'll probably have to pour it out. That would be terrible because it will be the first beer I've had to pour out in my short 1 year history as a brewer.
I'll post back the results though.
 
Well, we scorch malted grain all the time. It's called dark malt. Perhaps you have discovered the long lost beer making secret of the puritians!!!
 
If it only adds a minor burny flavour, bottle it up and call it "scorched earth" or something catchy like that! Call it a novelty beer or something lol!

I guess "Mistakes" were the way allot of things were discovered, so we'll see.

lol Smokey McBong sounds like a username for somebody who would advocate smoked hops.

How do you get smoked , er, I mean scorched hops in a full rolling boil?
 
Re read # 1 and # 3. I think the particles from the hops got trapped under my stainless hop spider.
 
I bet it is scorched hot break, or just sugars, not hop dust. I rarely use pellets but I occasionally will get a little scorching under my hop filter (hop taco type) and have never noticed a difference in the final product.
 
Well as it turns out this beer came out awesome. Can't detect any burnt off flavors. It did attenuate down to .006, so it's coming out at a whopping 10.5%.
 
Congrats. It is a beautiful thing when we worry about a something that turns out to be just fine
