Scaling a recipe for a SS Brewing Technologies 14 gallon fermentor

I need to scale my recipes from a 15.5 conical to a 14 gallon conical.

Anybody now what I should set my BeerSmith software for gallons into fermenter?

My hot side supports a 15 to 16 gallon brew.

I have one SS Brewtech conical rated at 14 gallons.

I would like to split a maximum batch of wort into a six and a half gallon carboy. Then, top off my 14 gallon conical to the max.

What is the maximum wort volume of the 14 gallon on fermenter I can safely push?
 
To scale a recipe, multiple your ingredient quantities by [new batch size] ÷ [old batch size]
Can BeerSmith do this for you? Probably. Is there not a "scale" option you can find?

Water volume(s) may need some additional fine tuning.

Obviously you need headspace in the fermenter during primary. Homebrewing batch sizes tend to be in multiples of 5 gallons because that's a standard keg size, so a 14 gal fermenter is designed to hold a 10-11 gallon batch.

Otherwise I'm not sure what you're asking.
 
I believe what type of yeast as well as your fermentation temp will dictate how active (aggressive) your fermentation is that will determine the needed headspace.

With that said, I would not put more than 12 gallons in a 14 gallon conical with a dome lid. In addition, you might want to consider using Patco 386 defoamer (oil based) to control the Krausen.

You nailed my question. I currently ferment an 11.25 gallon brew in my 14 gallon SS Brewtech conical. I was hoping to discover I could get more out of it.

good advice here too. I will begin using the defamer. I am pushing that part my brewery to the limit.

My remaining solution is to scale my planned brew to the hot side capacity. I will then fill the conical and use a carboy for the remaining wort.

An advantage is I can play around and compare the effects of different yeast strains.
