So I messed up at the brew store today when I was pouring my grain. Not too bad but here is what i did.

Pale Ale, 5.5 gallon batch 70 % eff (maybe closer to 75%)

Intended grain bill
9lbs special pale 2 row 4L
2.5 light munich 10L
.75 crystal 60

I was at the brew store debating using german crystal 57 vs british crystal 60L as those where my options. I had poured my other grains in and I was asking the owner the difference between the british and german crystals. I decided on using the british. But I accidently picked up the british 15L crystal and used that instead :confused:. trying to act like I knew what I was doing, I then picked up the british crysial 60 and added .25 lbs.

so my unintended grain bill is
9lbs special pale
2.5 lbs munich
.75 crystal (british) 15
.25 crystal (british) 60

So a little heavy on the crystal. How should I balance this with hops to make it not too sweet? Mash lower, more bittering hops, or add sugar to thin it out (and convert to an IPA??).

I am pushing 1.060 Sg

Hops planned (leftovers, in stock)
.5 EKG @60 5.8 % = 9.1 Ibu
.25 warrior @60 15.8% = 12.4 Ibu's
.5 EKG @20 5.1 % = 4.9 IBU's
1.o Cascade (homegrown~ 6.6 ibus) @ 10
.5 centennial @ 5 9.0% = 2.8 Ibus
1.0 oz cascade (homegrown) @flame out

possible dry hop of cascade, EKG, palliside, fuggle.


total calculated IBU's 38

Any ideas on the hop additions or recipe appreciated. I was hoping for a maltier pale ale with a strong hop flavore but now I am contemplating upping the hops into IPA territorry. Thoughts??
 
Put your recipe into beercalculus at hopville.com and see what the ibu's measure out to with the extra grain, and adjust your bittering hops accordingly. Also, mashing lower would help. :mug:
 
Not having punched in the numbers,I would say whack in more EKG@60 so you get about 20IBUs and look for 10IBUs from the 20 minute addition.
