Guys breweing my second batch of NB exract brown porter tomorrow (Mutts Nuts). Thinking a couple of alterations from recipe.

1) Late addition LME. Reading up 25% early and 75% at 15min seems about right?

2) Brewers friend indicates a near doubling of IBU with late addition. It seems like reading up says dont really reduce hops too much because the calculation may be off - 20%.

Recipe 1/2oz goldings and 1/2 fuggle at 60min, with the same amount at 10min.

Thinking I should go to 4/10ths oz for all four additions?


3) Original batch needed a bit more flavor. Adding some UK coffee malt. Thinking a 1/4 lb would add just a hint of extra complexity?

Anything too far off base with these alterations?
 
In the past, brewers thought they had a good handle on the effect of boil gravity on hop utilization. Now the older formulas are being challenged. There's disagreement among experts. I personally still use the Tinseth formula. But you're probably ok to use something in between like you're planning. Be aware that the bitterness might not be quite what you intended. You can make notes and adjust as you brew more batches - that's what I did.

I suggest adding the late extract at flameout and letting it steep for at least 10 minutes - this will pasteurize it. Or you could add the finishing hops at flameout also, and let it steep 20 or 30 minutes (hop stand). I find this produces both hop flavor and aroma.

I brewed before I saw your message. I did 1/3 at 60 minute and 2/3 at 10 minute.

....and on a whim tossed the extra 2/10th oz of hops in at 20min.

....and brewed on a different stove and found out getting 3 gallons to and maintaining a rolling boil was HELL.

Oh well. Kicked off vigorous bubbles in 24 hours at 64 in the basement at the cabin. We'll see how things are coming along in 4 weeks when I bottle it I guess!! :mug:
 
If you're having trouble keeping a good boil, you could partly cover the kettle. I haven't tried it but have read many posts here where folks have done it with no problems.
