Hello all,

Does anyone by chance have a recipe that resembles Cherry Wheat by Samuel Adams? Any help or someone that could point me in the right direction would be much appreciated.

most people feel that SA cherry wheat tastes too much like cough syrup.

I am currently brewing a cherry wheat. It's just a standard american wheat recipe with Oregon cherry puree added to secondary...

4.5 lbs pale 2 row
4.5 lbs white wheat
0.5 lbs of dextrine malt

.75oz cascade for 60mins
.25oz cascade for 5mins

WYeast 1010

1 can of Oregon cherry puree added to secondary.

i have about 1 week left in secondary before going to a keg for conditioning.
it smells great so far.
 
I think the SA Cherry is real mild, not to over powering in regards to cherry flavor. I'm not one for fruity drinks but I do like that beer for some reason. My wife picked some up at the store and when I read the label I was thinking that must taste like dog dung but I didn't say anything because she was so nice to think of me when it came to the beer section at the store.

I opened one and thought it smelled way to sweet and then I tried it, I thought it was great from the first sip to the last. Very surprised and happy that I has tasted yet another beer I would love to brew.
 
If you are looking to try something more like a SA cherry wheat, you might want to try the same recipe as above, but try using a cherry extract instead of the puree.

Go easy on the extract, you don't want to overpower the wheat with a mouthful of cherries. I used fresh cherries and went really overboard...
 
Sam adams website gives some hints to the ingredients, maybe this would help:

michigan cherries, "touch of" honey, malted wheat, noble hops...

I'm sure you can figure something out from there. In fact, I may try to concoct something for the SWMBO; i'll post a recipe if I decide on one.
 
Threw this together quickly in Beersmith. Critique is welcome. Note that I used extract (Black Cherry from Austin HB) to alleviate hassle. Further, PLEASE NOTE THIS IS FOR A 1.5G BOIL, so if you plan to boil 2.5-3 or 5g full boil, PLEASE ADJUST THE HOP ADDITIONS for utilization differences. I wouldn't want this to be more than 15ish IBU or it may mask the cherry flavoring.

I already put these two recipes into Beersmith. I await your comments on the finished products.

SilkkyBrew, are you brewing your SA Cherry Wheat recipe?
 
efreem - probably will brew it up sometime soon; busy at work these days and the weekends (although I love brewing and do so when I have more time) I'd rather run around a little bit and see the daylight, drink at nice brewpubs, etc. but I may do a late night brew session some night this weekend.

If not, once the busy season dies down here in a couple weeks, I'll have more time to brew and will do it then...

EDIT: On second though, I just purchased everything I needed from austinhomebrew and plan to brew this as soon as I receive the package and have a spare 3 or so hours...
 
I too am not a fan of Sam Adams Cherry Wheat. Something about it bothers me, and I like cherries a lot. Kriek is very good, but too sour for most people. I'd like to try a cherry wheat beer that tasted a little...well, "wheatier."

Keep the thread updated and tell us how yours came out. Your recipe seems a lot easier to brew as the original one was all-grain. I don't have the equipment yet.
 
Wheats are some of the most simple recipes to brew IMO. No need to overdo something that doesn't need overdone. Some wheat, some noble hops, some yeast (and in this case splash some honey and cherry concentrate) and you are good to go...

I'll up date the thread once I brew (probably a week or two) and once its ready to drink.

I'm hoping this will come out tasting SIMILAR to Sam Adams. I've had the Sam and its OK. I am hoping to draw back the cherry just a bit. That's why I chose cherry extract so I can add to taste at bottling. With whole cherries it would be a guessing game I think...
 
So, I got my ingredients to brew this and two problems. One, the fruit extract smells terrible, like perfume or something. How should I replace this with cherry fruit. How much cherry (#s) for a 5g batch? Second, I ordered Safale US-56 ale yeast to use on this, but they gave me Safale-04 (english ale yeast). Will this still work or should I wait until I can get some US-56?

I also have some regular coopers, nottingham, and muntons gold dry yeast packs I've had lying around (in the fridge actually) for a while, but never used because there are better options generally (although nottingham is topnotch). Would one of these work better? Nottingham is pretty neautral?

Thoughts?
 
Silkky, you ever got around to brewing it? I have a Honey Wheat kit lying around that I was looking to spruce up, how did the cherries work out?
