I'm getting to bottle my first home brew in 12 years. I just took a gravity reading and I'm down to 1.010 down from 1.052. My concern is that the sample tastes very yeasty. Is this something I need to worry about? Right now the beer tastes much like a good wheat beer, and I wouldn't be bummed at all if the beer didn't changing much. and I used the US-05.
When the beer conditions am I going to loose the yeast flavor? Or do I need to chill and just see what happens?
