Beer Style: Oak Aged English Strong Ale
Hop Variety: Columbus, Fuggels
Malt Variety: Two-row barley, caramel 150L
OG: 1.140 * ABV: 14.5 * IBUs: 41
Color: Copper

Samael’s Ale is a super-caramelly, oak aged English-style strong ale. Perhaps the least hoppy (sacrilege here at Avery!!) beer we’ve brewed, to accentuate the malt. The oak is very apparent in this rich and high gravity ale, adding additional depth and complexity with a woody and cask-like nose and a pronounced vanilla flavor on the palate. Notes for 2007 - With the addition of an additional roasted malt, Samael's now delivers subtle bitterness to add balance to the natural sweetness.
 
The ABV for this beer differs based on what website you go to... I have a couple bottles in my beer fridge and and they read 15.5% ABV.

Just with Marrs Otter pale malt and Simpsons Extra Dark Crystal (160L) to get the right color and OG at 68% efficiency in a 5.75G batch I came up with

30 lbs MO
2 lbs C160L

1 oz CTZ 14% AA @60
1 oz Fuggles 4.5%AA @30

That is expecting a 80% apparent attenuation to get to 15.5%. A hella pitch of WLP007 might be able to get there if you mash at 149 - 150 for 90 minutes or more...

Oak in secondary and age in bulk in tertiary for months. Temp control during fermentation would be HUGE. Don't let temp get away from you on a beer this big or you'll have an undrinkable fusel mess.

Just a thought, the head brewer at Avery is really cool and would probably just give you a recipe if you asked. They are very friendly to home brewers. Good luck and post the recipe once you get it!

Yeah, I sent an e-mail to Avery but have not heard anything as yet. I asked for any hints about cloning Mephistopholes, The Beast, Samael and Maharaja. Haven't had a reply yet. Perhaps I was asking for too many. :eek:

I have ingredients to make this clone but I don't know how much oak to use. Anyone have any recommendations?
 
I'd start with 2 oz of cubes, soak it in bourbon or spirit of your choice. Let it ride for 2-3 months. You can always add more.., but you can't really take it away

Rate Beer's Commercial Description mentions Turbinado sugar as an ingredient, seems plausible in order to get that gravity. I just had one and I thought it might have had some honey in it, might be because of the sugar.
