Saison Yeast on a Wheat Grain bill?

Has anyone pitched a Saison yeast (Danstar-I'm a dry yeast guy these days) on Wheat Grain bill?

I know out of style, but what would you expect?

I'm thinking about trying it.
 
it would just be a saison with a large amount of wheat. not too far out of the style. Whats the grain bill? Im sure itll be tasty. Ive got a saison going right now with 30% flaked wheat 20%rye and 50%pils. Its really the yeast that makes the saison
 
I was thinking something like this for a 5.5g batch

4.25# Wheat Malt
4# 2-Row
1# Munich

I guess my pondering is that I know Saison yeasts will eat most sugars and drop the FG low low low, but its the proteins in the wheat that give them body.

Ergo, more wheat, more body in my saison.

If I am mistaken, please correct me.
 
no thats right. this is also why i like using oats, wheat, or rye in my saisons - to combat the high attenuation and prevent them from being thin or watery. Ive been meaning to experiment with a ferulic acid rest in a wheat heavy saison to see if the saison yeasts react the same way to those compounds as hefe yeasts and make some banana/clove flavors. Ive gotten clove from one or two of my strains before, but Im not sure exactly where it came from.

Anyway looks like a good beer
 
Yeah, I figured that the spicy peppery flavor that seem so natural in a saison might taste appropriate in a wheat beer in place of the clove that comes with some wheat strains. Plus the saison can handle the heat in my house right now: the real reason I am forced to get creative.

I've split quite a few 10 gallon 60/40 wheat /pils hefe's mashes into 2 fermenters and used 3711, Belle Saison, and a few other saison yeasts with good success.
 
Wow, up to 60% wheat (if I read that right)? I've heard of the inverse, i.e. 40/60.
 
Did this with a wit grain bill, coriander and orange zest. I thought it turned out. Not my favorite brew, but that was not the yeast's fault.

I used Wyeast 3726 - PC Farmhouse. I thought it gave a kind of clove like spiciness that worked well.
 
Did that. Yeast flavor tasted right at home in a wheat beer, just pretty dry and a touch tart. Perfect for a summer wheat beer. Very popular with guests.

I'm seeing about 45% wheat. Looks good to me!
