Hello all,

Is this good water to brew Saison with (Meijer spring water)? Should I dilute it with 1-2 gallons of distilled?

Bicarbonate 260
Calcium 79
Chloride 15
Magnesium 26
Sodium 8
Sulfate 24
Alkalinity 260
pH 7.92


Another option is to use Ice Mountain:

Bicarbonate 95
Calcium 35
Chloride 7
Magnesium 15
Sodium 4
Sulfate 25
Alkalinity 95
pH 7.5


Brew day is tomorrow. My options are limited.
 
Either option will require adding acid to the water, even if you dilute with distilled. Of your options, the Ice Mountain is less alkaline and requires less acid. But you still need to acidify. Lactic acid is preferable. Learn to work with acids...especially with paler beers.
