im' finding this out, or maybe it's finally the fact that i'm controlling temperature properly? my safale S-05... i pitched 4.5 days ago, took about 24 hours to show signs of activity, then BLAM! a blast of bubbles every 4-5 seconds, it's been the same heavy fermentation for 3.5 days now, i've never had a brew that kept going this long!
OG was right around 1.075. so it wasn't overly high.

But prost to you! safale bunnies!

Yep. Just got finished checking one of my brews (I have two in the chamber). Brewed it on Sunday and had an OG of 1.048. Checked it and its already at FG: 1.012. US-05 is a beast!
 
and it is still at the same fermentation almost 5 days later! wowza, and tastes... great!
 
I love S-05. That's the experience you will get every time (provided you treat it properly).


I use S-05 for most of my beers. Certain specialty beers that require unique characteristics might get different yeasts, but I love the clean aspect for my Pales, IPAs, Barleywines, etc.
