One pack in three gallons at 1.055. The wort was at 63f and ambient was 62f. It was bubbling through the airlock in ten hours.
I haven't used 189 in a while but I noticed a similar quick fermentation kick off with 34/70 after I rehydrated a pack. It was a year out of date hence the rehydration.
