Ok so i came up with a nice IPA recipe last year (see below). my mash ran a little hot around 158ish (electric stoves suck for dialing in a specific temp).My og was 1.042 my desired og was 1.056. In the end i added some DME and Candi Syrup equaling 1#to up the gravity. I didnt want to add to much. It turned out great but it was a little lower abv then I wanted. This year I made the same recipe but got the mash right at 155 but the og was spot on 1.042 again. I ended up adding 1# candi syrup again. Im glad I hit the same og but what should I do/add during the boil to increase the og from 1.042 to 1.056.

any help is greatly appreciated.

Recipe
5 gallon batch:

8 lbs 2 row
2 lbs C40
2 lbs Wheat Malt

Mash at 155º F

0.5 oz Perle, 60 min
1.0 oz EACH Perle, Willamette, & Cascade, 20 min
1.0 oz EACH Willamette & Cascade, 10 min
1.0 oz EACH Willamette & Cascade, flameout

last year yeast wyeast 1056
This year: WLP001 California ale yeast

Ferment for 3 weeks @68
dry hop with another 1.0 oz each Willamette and Cascade for 5 days, then Kegged

Note: this years batch has a less pronounced hop taste but smell and mouth feel is the same. its a great recipe and i would love to perfect it.
 
Do you batch or fly sparge or no sparge or BIAB? Does this happen a lot or just this recipe?
 
i dont know what the difference between batch or fly sparge. never heard those terms before. i use a 8 gal stock pot with a spigot on the bottom to make the mash then drain into a few pots. sparge directly in 8 gal, temp right around 168. Clean my 8 gal combine them all for the boil.
 
boil longer, instead of a 60 min do a 90 min..

I am also confused you didnt know what batch or fly sparge is, are you brewing in a bag or are you using a false bottom of sorts and rinsing the grains in either of the sparge methods mentioed?

Theres tons of things why your getting a low OG, bad grain milling, too much water, PH levels, need to know your process a bit more for a better answer..

So you completely drain the mash after mashing? Do you recall how much water you mashed with? Did you record the SG when you drained after mashing? Also, is your 1.042 before or after the boil and what were your before and after boil volumes?
 
Based on what's here and making some assumptions, it looks like you're getting 60% mash efficiency. How about just increasing your grains by 25%? 10lb 2-row, 2.5lb c40, 2.5lb wheat malt?

I agree. Easiest way to up your OG and abv. Just adjust your sparge amounts accordingly
 
i mashed with a little under 4 gal of water
sparged about 4.8 gal of water.
(sparged till I reached my pre boil amount)
Pre boil amount 6.3 gal
after boil right around 5 gal


mash and sparge in a bag, I do not have the false bottom on my 8 gal pot yet
. I let the mash drain then add some more water let it drain repeat till i have my pre boil amount of wort.

the 1.042 og is taken after boil and wort cooled down to 70.
