i brewed the soba ale kit on new years day 2012.
after 4 weeks of fermenting, it was bottled.

i used 12 bombers (22oz) and the rest were 12oz bottles.
kept them stored for 3 weeks before tasting the first one, and it was a little on the flat side, so i left alone a few more weeks.

my basement stays right at 66F, so a little on the chilly side for carbonating.

we did a taste test last weekend, side by side, homebrew soba bottled for 5 weeks vs rogue soba ale fresh from newport. i felt the kit compared nicely to the original, but both felt a little undercarbed...

it might just be a characteristic of this beer?

I've labeled and stashed a few to check at the 6 month mark, but have started drinking the rest.
 
I did a ten gallon batch then fermented five gallons with PacMan and five gallons with an American Ale variety. The PacMan was better. Both were petillant.
