I started a tradition of brewing a black IPA each year for the holiday season. This year's rendition exceeded my expectations so I am posting the recipe. I had received a new yeast (Omega Yeast - OYL-057 - HotHead Ale) and wanted to experiment with it at normal room temperatures as a possible alternative ale yeast when the fermentation chamber was being used for other purposes. While the apparent degree of fermentation was only ~75% (1.018 FG), the beer turned out to have a nice balance that belied it's higher than expected FG. So far I am impressed with this yeast and plan to test this yeast with other IPA recipes as well.
