I'm thinking about getting a small reverse osmosis setup for brewing water only. Would I just store it wet and flush for a couple of minutes between uses? I would only use it 1-2 times per month. Or would this infrequent usage cause problems with the unit.

I'm thinking about something simple like:

Anybody else only use their RO system for brewing?

I use RO water for my anodizing hobby.
That system looks very reasonable. I highly suggest getting a tank that you can fill and keep on hand so the water is ready when you want it. Just use a food grade vessel and one of these: http://www.amazon.com/dp/B00HZ6A476/?tag=skimlinks_replacement-20

Just leave it charged with water when not in-use... it will be fine.

I just pulled the trigger on this same system - did you end up buying it? How has it worked for you so far? I am in the same boat - I just want to use it for brew days, which would be 2-3 weeks apart at best. I am thinking that I may install a diverter valve fitting underneath my kitchen sink so that I can just hook this up when I am ready to collect my RO water for brew days.

Due to this thing only having a max rate of 50 gallons a day (about 2 gallons an hour), I am planning on collecting my water the night before so that I am not holding things up in the morning when I am trying to start heating water.

I am super excited for this - I just started reading up on water chemistry over the past couple weeks and I know that this is going to make a huge difference, especially since I like to make lighter-bodied beers.
