RIS is such a broad category it is hard to give too much advice. i think overall people expect them to be chewy, big, and have tons of flavor. i'd be a little worried about citrus flavors from motueka clashing with the roasted flavors. i'd probably substitute that out for more williamette.
personally i like them with fewer hops and more layering of dark malts, but what you're proposing is within style, too.
