Hey guys, I am looking to devise a new recipe for a riesling pyment. The only recipe I have is from Schramms book which uses 5 gal riesling juice and 7lb honey which according to Schramm yeilded a must of 19 brix or 8%abv.

I am wanting to get closer to 16% however I cannot for the life of me figure out how much more honey I will need to accomplish this. I feel like I am missing something incredibly obvious so if I am I apologize. Here's all I have so far on the original recipe:

5 gal riesling juice
7 lb honey

SG 1.079 (19 brix)

On second thought I think I finally figured out this GotMead Calculator. To get me to 16% I would need to add 7 more lb of honey to bring my SG up to 1.130 so my two main ingredients would be as follows:

5 gal riesling juice
14lb honey

SG 1.130
16.6% ABV

Can anyone confirm this for me?
 
And the most definitive way to accomplish it would probably be to get your juice and honey then start mixing your must, start with the 7 pounds and check the gravity then add a couple pounds at a time, mixing thoroughly and testing until it reaches the 1.13 OG that you need, might be a little more time consuming but it saves using math and guestimations.
 
K1v-1116 should do fine, of not then a healthy ec1118 would work as well. I'd prefer the k1v though. I will be doing SNA and plenty of oxygenation to start. I've done 18% with 71-b before, just gotta give it some lovin... :)
 
Sorry for the double post, accidentally hit send on my phone before I was ready. So my plan is to check the gravity of the juice when I get it and use the gotmead calculator to determine how much honey I will want total. Then hold back 3-4lb. Start the brew and when it gets down to 1 add the remaining honey. I know I won't get a spot on accurate gravity reading but it should be close enough. What do you guys think?
 
It all depends on what you want. Sugar levels of honey can vary so using a set volume can vary your abv. Personally I am satisfied with close. If my abv % is off a point of so I don't really care as long as I am satisfied with the flavor. Some folks want to know down to the tenth of a % and that is fine too.
