Hey Guys!

Just wanted to introduce myself. This forum is absolutely incredible. Every single question I have had or complete freak out moment I've experienced during my first 3 batches have been answered or someone else has already gone through it!! Amazing.

I've been interested in home brewing for quite some time now and I've actually had most of the equipment sitting in my garage for 5 or 6 years. I consider myself a perfectionist and I guess I was always scared to fail. I finally took the plunge and I have such regret that I didn't start sooner! I am completely addicted and and I have this huge thirst for learning as much as I can.

My first batch was an extract Pumpkin ale from Midwest which I'm certain I butchered. The beer has an incredible color and great taste but it has kind of an oily mouthfeel. It may have some sort of infection. I was so stressed out about my first batch I ended up getting hammered while making it. :drunk:

My second batch was an extract Pliny the Elder clone from More Beer. When transferring the beer to the primary it completely foamed up and I think I must have lost at least a gallon and half. However, I dry hopped for 10 days with enough for the 5 gallon batch, just bottled it the other day and all I have to say is wow! The first taste had me patting myself on the back.

I just brewed a very well reviewed Black IPA extract kit from Northern Brewer this weekend. However, I decided to double the hops the recipe called for and I also add a pound of coconut to the boil. I would like to add more to the secondary and I was wondering if anyone had any tips for me on how to go about doing that. Should I use an extract instead? Roasting the coconut on a cookie sheet was quite messy and there was a ton of it! People say to stuff in a muslin bag and weigh it down. I have trouble envisioning how that will even fit down the carboy neck. LOL How long should I leave the coconut in the secondary? Should I let it sit in the primary for 3 weeks then move to secondary on the coconut AND dry hop for a week then bottle? As you can see I'm kind of struggling with how I should go about doing this.

Welcome to the group, sounds like you already have the brewing addiction. When adding flavors to a fermenter, I always go by taste. When it tastes good, it's done. If you add them one at a time, you can control flavors by racking the beer into another carboy. Or, just put multiple things in simultaneously, it may not be perfectly balanced, but waiting vs. perfection is a compromise.
