Still hoping someone will have this. I am considering contacting the brewery directly and asking, as I don't think this is made anymore.

Well I doubt people on here will specifically know that beer.

But from looking at their website the Eder Export has a starting gravity of 12.5 Plato which comes out to an OG of 1.050.

Then it's 5.5% abv so am I correct in calculating a FG of 1.008?

I assume it's correct because their description says:
"A bright export beer with a rounded taste. It is highly fermented and has a
fine-tuned, mild hop aroma - the
hearty and tasty export beer for the connoisseur."
https://www.eders.de/marken/eder-export.php

It is a brewery in Franconia and they point out just a mild hop aroma.

I'd probably aim for the low to middle range of an Export IBU's and very little in the late kettle addition hops. Use either Hallertau or Tettnang ideally, but any german type noble(ish) hops should be fine.

For the grains I'd think you could just go with all pilsner malt up to 1.050. Small inclusions of other grains would probably work, some acidulated malt, some carahell (but I assume not because I assume carahell is less fermentable than pilsner malt)
