My wife purchased 2lbs of "Japanese Red Bamboo" honey for me for Christmas. It comes from Japanese Knotweed but is, I guess, called red bamboo because that is more appealing. It is a red honey with a sweet taste, according to the label.

I thought I might make a 1 gallon batch but I usually use 3lbs of honey for 1 gallon. Can anyone think of a complimentary honey to use in conjunction with the red bamboo I received? Thanks.

Maybe something else light ? get 2lb of that, then use 1.5lb of the JRB and 1.5 of the other light honey. Ferment dry, but use the reserved .5lb of the JRB honey for back sweetening to make sure that's the flavour most likely at the forefront of the taste........

Clover & alfalfa are pretty generic honeys, should work with just about any other varietal & virtually fade into the background.
Regards, GF.
