What will this recipe turn out like?

3.3 lb bries bavarian wheat lme
3.3 lb bries golden light lme
1 lb brown sugar
60 min .5 Oz nugget
40 min .5 Oz nugget
20 min .5 Oz nugget
10 min .5 Oz nugget
Nottingham yeast

Any suggestions? I'm just limited to the lme I have on hand but I can afford some steeping grains if need be. Thanks!
 
You would have a superhopped wheat beer. The hops are going to dominate. If you are a hophead of the bitter type, then this may be ok. Changing the hop schedule to 60/15/5/dry hop, makes it closer to my tastes.
Keeping your hop schedule but adding another can of light lme brings the above solidly into wheat IPA territory, with more malt for balance.
 
I do like hops but not too bitter. I like the idea of the hop schedule you came up with. Thanks for the help :tank:
 
Not sure what you have there. It will be beer.

In 5 gallons, it should give you an OG about 1.056.

Half an ounce off nugget at 60 will get you about 25 IBUs. Not particularly bitter.

2 ozs off hops total is not really in Hoppy beer territory. But with Notty yeast and spicy nugget, you are in the area of an English Pale Ale.

Trying too minimize changes, I think I'd look into one of the following:

1) Only use half the Wheat LME, and steep a half lb of English Crystal (or alternatively some C40), and move the 40 and 20 minute hops to the end. This will add a little more flavor, lower the abv in line with a Pale Ale, and keep the English yeast and hops.

2) Leave it as it (but move the 20 and 40 min hops to the end), and use a Belgian yeast.

3) Use 1 oz of Nugget at 60, and get a few ozs of good American hops and add them at the end (Citra, Amarillo, Simcoe, Cascade, Mosaic, etc).
 
I think I like what's behind door #1. One of my goals was to have about 5% abv. My other goal was to just have a beer that is very drinkable. I've thrown together recipies in the past with all grain and the results were a rough tasting beer. I have a good grasp on brewing but lack in knowing what ingredients go good together. The wheat lme is 65% wheat 35% barley. When I put the ingredients into beer smith it gave me a ballpark of 5.4% but from what you are saying I can get away with using less lme and still have what I need.
