Looking for recipe critique of a Dark Wheat beer (w/ bit of smoke)
Using ingredients I have on hand, any suggestions welcome
Debating between crystal 20L and 60L.
Might add Rice Hulls

Method: All Grain
Boil Time: 60 min
Batch Size: 11 gallons (fermentor volume)
Efficiency: 78% (RIMS - brew house)

10.5lb Pale 2-Row 52.5%
4lb White Wheat 20%
2 lb Munich 10%
1.5lb Midnight Wheat Malt 7.5%
1.5lb Crystal 20L 7.5%
0.5lb Oak Smoked Wheat 2.5%

Wheat total 30% of grain bill.

0.5 oz Warrior 60 min
0.2 oz Chinook 20 min
0.5 oz Willamette 10 min
1 oz Liberty 10 min
2.2 oz Liberty 5 min
0.5 oz Chinook 5 min
2 oz Willamette 5 min

I'm going for something between an American wheat and a Dunkelweizen, with a bit of smoke.

Current working name "The Last Engine That Could"
 
You might consider rice hulls in the mash. Also this is a pretty aggressive hop bill for the wheat, but I kinda think it will be awesome because of the dark wheats and smoked wheats that you are using.

They should provide enough malt back bone for the hops
 
Yes I was thinking of Rice hulls always a good reminder, and you are correct on the Hops it is at the top end of the style for an American wheat (15-30), and 9 IBU above the Dunkelweizen range(10-20).

As I've been kicking this recipe around during the week the IBUs have ranged between 20 and 35. My taste tends to fall toward the Bitter like my soul, but I should consider others who will be drinking this.
 
stared off with a small 3.5 batch
on advice from a friend replaced the Chinook with more liberty, as Chinook was not to either style.
so its warrior to bitter and Liberty Willamette for flavor/aroma.
Turns out the AA on the packages are a bit lower than the recipe creator. so IBUs on this batch will only be around 21-22 IBU which is at the top end for a Dunkelweizen and still in a good range for an American Wheat.
