I had never made an oyster stuffing before, so I set out to make my own version, which uses essentially raw oysters. I did it the lazy man's way, and the result was wonderful.
Sauteed up one small onion and a generous amount of celery
Poured off the liquid from a quart jar of raw oysters ( Costco extra small),
Cut oysters into pieces with scissors (half of the jar)
Heated oyster liquor and additional water for Stove Top Turkey Stuffing mix.
Put stove top stuffing and sauteed onion and celery, oysters, and a handfull of grated sharp cheddar cheese in a large mixing bowl, and mixed well. Sauteed mixture was still hot. Oysters added at the last.
Combined the solids with the liquid as per directions, and added additional bulk stuffing mix (just dried bread), to achieve the desired moisture level.
In this case the oysters were well warmed by being exposed to the still warm sauteed mixture and then the hot liquid, but were not cooked. The result was that the oysters are tender and delicious as oysters should be.
