I just recently discovered that I have some distant relatives who don't live too far from me who produce bucketwheat honey and are willing to give me a pretty good deal on it. I can get it raw or heated, but I'm not sure what would be a good type of mead to make with it. Note that this would be my 2nd batch of mead I will be making so I'm looking for something relatively simple and a couple of recipes as I think I'll be doing a few smaller 1-3 gallon batches before I attempt another 5 gallon batch.
Any suggestions for this type of honey, and would it be better to get the honey raw since I have the option?
