When I first started homebrewing I was exclusively WL since they were local and the instructor of my learn to homebrew class recommended them. Lately I’ve been getting away from them and feel like my beer was getting better.

Speaking of yeast. Looking for someone to tell me this is a horrible idea. I took some of the last drops of my 1056 starter to do a force ferment on my Session IPA yesterday. Looking at the flask there is a beautiful creamy white layer of yeast. Thinking I should harvest that for a batch next week. I didnt boil my flask but did a star-san soak baefore using it and generally I try to be sanitary whenever I am handling yeast. Am I crazy to not use it? Or am I right to be paranoid that if I use this yeast my next batch will be infected?

I'd probably worry more about stress on the yeast of the force ferment than sanitation. But who knows, might just work out fine.
 
Would I be asking for a bottle bomb if I bottled a 1.012 FG beer into a 750ml, while adding a drop of bugs for refermentation? I want to try this out on 2 bottles.

this is the farmhouse joint i brewed with hornindal kveik/honey/rosebuds/lemon peel/elderflower + junga hops.
super crushable. head retention is muy bueno.
getting very subtle aromatics from the flower additions and light bitterness from the lemon peel.
prolly gonna add more flowers next time around and use fresh lemon zest vs packaged lemon peel

10 gallon batch. i played it safe with adding 2oz of rosebuds,
1oz of elderflower and 2oz of lemon peel @ flame out.
out of the 3, the elderflower is in the forefront.
im gonna run with 4oz of rosebuds, 1.5oz of elderflower and 3oz of fresh lemon zest next go round.

Thanks, now we just have a zoning board hearing, a environmental board meeting, building, local, state, and federal permits. LOL.

Got grilled for 45 minutes, but the board seemed excited to work with us. We just have to add pull offs every 1/4 mile on our private drive because it drops down to 10 foot in areas.

We also sent in our application to zone 170 acres for industrial hemp. I'm pretty excited about this new farm bill. We just have to wait to see how the FDA and TTB will regulate hemp/CBD beverages.

Landrace is just an "easier/more correct" way to describe yeast Northern European farms. Kveik is really only yeast from Norway. All my landrace yeast came from DeWayne @ kveik world order and Justin Amaral (who also got them from DeWayne).

Edit: I use to say Kveik blend but that blend has yeast from Latvia, and well you know how beer nerds are.

Baltic/Scandinavian blend, I like it. Time to make a sahti porter.
 
We just have to wait to see how the FDA and TTB will regulate hemp/CBD beverages.
I heard there's a big crackdown coming in Texas since they actually legalized CBD for medical use from dispensaries last legislative session (whereas it's been a gray area)

Argument: if you need CBD, just get a prescription! Visit one of our many (THREE in the state) dispensaries to get it and give us money.

Right now we've got New Belgium sending hemp beer, a local coffee producer selling cbd-infused coffee in cans, and at just about any vape shop you can pick up oil. At the local petstore they sell CBD dog treats even.

I have a few carboys from early this summer with split batches of mixed-ferm sours, some turbid mash, some single-infusion mash. The one pictured below has a lower fill level than I had anticipated, coupled with temp change between 63-68, the airlock goes near dry every few days. I've had enough, so I plugged it with a silicon stopper. Every few days I lift the stopper just enough to relieve the minimal pressure. Is this a viable long term option, or am I just increasing my chances at oxidizing and/or creating excessive acetic acid? I don't really have any options to top off the carboy, other than to blindly blend some of them, which I don't want to do.
