Ramp wine?

I haven't made any wine yet, unless you count Apfelwein, been making beer for a few months. The ramps are starting to come up here, and I was wondering if anyone has a recipe for ramp wine. I've seen it in stores, so I know it's possible to make, but I can't find a recipe anywhere. Thanks.

A ramp is a wild onion, right? Like a leek? I've never seen them (as they wouldn't grow around here), but you can make wine out of anything.

For winemaking, I use Jack keller's site all the time. It has tons of recipes and tips for winemaking. He has a recipe for leek wine here: http://winemaking.jackkeller.net/reques83.asp

Thanks Yooper. Yep, a ramp is a leek. I had found that recipe, but it just didn't seem like 4 ramps would do the job. Maybe I'll have to try it though. BTW, what is acid blend, and where do I buy it. Thanks

Acid blend is a powdered blend of tartaric, malic, and citric acids. You can buy it at any LHBS. It's cheap, and used in many wines to provide the acid needed for taste. In some recipes, you can use a lemon for the citric acid, but the acid blend is great for most of my country wine recipes. It's cheap.
