So first time using S-04 and think it's going to be the last.

Had to do 2 rackings to get all the settlement out. Image is from second racking

Me and the wife found that it had gone very tart and its going to need lots of adjustments to make it drinkable for use.

Well we live and learn on each batch.

Yup, one of the downsides to S04 is the light fluffy lees that's easily disturbed and hard to rack off. Nottingham is much better for a small batch. It makes a tight compact lees.
