How's it going everyone? Looking ahead at my schedule I realized that I'm not going to have time to bottle my Coconut Porter after I rack it to the secondary this weekend in order to add in the coconut for at least 2-3 weeks. Should I just wait and let it sit in the primary longer or possibly add more coconut to the secondary in order to keep the flavor a bit stronger as I would expect it to fade after a few weeks in the secondary.

I was thinking of bumping up from 1lb as per suggested in the AHS Coconut Porter kit to somewhere between 1.5-2lbs just to insure the flavor after a few weeks.

Let me know if that sounds like a good idea or shoot me any other suggestions. Thanks.
 
I don't think the flavor will fade very much after only a few weeks, but adding more than a pound will make the flavor more pronounced and maybe you will like that more, its all preference. You could also and a few flakes to each bottle if you wanted extra coconut flavor.
 
I've made a coconut beer once, so I am not an expert. Having said that, my coconut cream stout sat in secondary for 26 days with one pound of baked coconut. When it was ready to drink, I was a bit disappointed at how faint the coconut flavor was. If I were making your beer, I would definitely put in more coconut. It depends on how much you like coconut, though.
