must have gotten a virus 'cuase it was BITTER, ASTRINGENT, and had a funky oil slick on it. Now it swims with the fishes. Man, that stuff was nasty. Fortunately whatever I did wrong didn't carry over to my 4th, 'cause it's gooo-oood! I can't quite nail down any specific case of unsanitary-ness(?), but it happened anyway.

So R.I.P., my Bitter, Brown, Oily friend........(Taps playing on the trumpet ensues)...and I will brew and learn.

No clue what you did different between batches?

If you ever get another bad batch keep it going. It may become a new life form and take over the world.
 
Did you try to mellow it out with a little aging? My first batch initially turned out like that, but I let it sit for a month and a half (too busy and/or lazy to dump it) and the nasty flavors mellowed into beer flavors. Just my experience.
 
Yeah, unless I know for sure that I put something truly toxic into my beer, such as foreign objects or bad chemicals, I'll hang on 'til the bitter (no pun intended) end. I've had a batch that I've known for a fact is slightly infected, but I just spooned out the floaties and drank it anyway. Not the best beer, lol, but drinkable. Aging can definitely help as well.
 
I had a brewing disaster not long ago. No infection, but the results were the same. Hopefully, that's just your one in a million.

This was one of two carboys that fertilized my yard.
