Generally, a low alcohol hefeweizen. Taste best fresh; supposed to be cloudy with yeast; yeast is part of the flavor,etc.

Note: You will still generally need at least 4 weeks for completion (1-2 weeks in primary, 3 or more weeks in bottles)

Other ways to make a beer fast:
High pitching rate - make a large, low-gravity yeast starter and pitch it active.
Swirl the fermenter - Keep the yeast in suspension (only during active fermentation in a carboy, while co2 is protecting from oxidation)
Crash cool - for kegging only (once fermentation is finished, crash cool overnight and then you can keg it the next day, force carb, and drink right away!)
