For steeping? A gallon or two. Doesn't matter too much. You're just extracting proteins.

Ok I put a gallon and was just curious. I'm supposed to do that for 30 min then it just says boil for 60 min... Boil what for 60?

You take the grain out, add your extract, add water to get up to volume, and boil.

Follow the hop schedule for hop additions. If it's a 60-minute hop addition, add it when it starts to boil, then start the timer.
