I have been supporting my local brew store and the 2 kits I have gotten there have gone really well. Oktoberfest and Nut Brown Ale, both from TrueBrew.


I went in yesterday and told him I wanted to do something outside the box. I told him I like Stouts so he gave me a recipe for a stout he said he has made but has to convert it to extract as the recipe was written for all grain.

He gave me 3lbs dark roasted barley, 1lb crystal malt grain
2 3.3lbs liquid malt
2oz Fuggle hops
safale 05

So why I am posting here is - the amount of grain was excessive, I couldn't even use it all. Also, I never had a good heady boil, it barely had any coagulation. It has been 12 hours and there is no sign yet of fermentation. I was surprised he didn't include any DME, is this going to be a problem?

Please ask any questions for clarification, I am still a novice brewer.

3lb of dark roasted barley = way over the top.. 1/2 lb sounds more in line.
 
I figured since it wouldn't even all fit in the steeping bag...

How about not adding any DME, legit or will it be a little weak?
 
DME and LME will both provide fermentables, so not having DME isn't a big deal.

The biggest benefit of DME is it's longer shelf life. I agree 3lb roast barley is a lot....but since you're already on your way just let it ride and see how it turns out.
 
Ok great, thank you Snowveil.

Since I used 2 lbs of the roasted barley, do you think there could be some off flavor? Or just really bitter/smokey? Anything I could do to mitigate that at this point?
 
If you use too much roasted barley, you can wind up with too much bitterness. 2lb was probably twice the amount needed. What was the hop schedule? Form your post is this the correct recipe.

6.6 lb Light LME
2.0 lb Dark Roasted Barley
1.0 lb Crystal malt (you didn't specify which one)
2 oz Fuggles (boil time?)
 
I added 1oz hops at start of boil and 1 oz at the very end, ~5mins left on the boil.
 
30 or 60 min boil. Either way the bitterness from the hops is not enough if this is for 5 gallons. This is based solely on using Brewers Friend for the recipe.
