Hello all! hope everyone's brews are going great!
just had a couple questions about Secondary Fermentation as i have never done it but definitely understand the concept.
I brewed a Hazy Rye Saison a couple weeks ago(day 16 of ferm is today)and am considering tossing it into secondary with a PACK OF Wyeast Roeselare blend and some collected dregs from fancy bottles ive had over the last month or two and i am wondering if i even "Need" to transfer the beer to another vessel at all.
I really want to bottle a little of it to just see how the base beer bottle conditions over time! if i rack off like 2 gallons(the carboy is VERY full as i slightly underboiled it and ended up with more than intended) and bottle it and then was just thinking i could make a starter with this "Starter in a can" i have and the Roeselare and dregs and then just tossing it into the carboy with the remaining 4 or so gallons that remain in there.
is there any REAL reason i shouldnt be doing it this way i guess is my major question/concern.
running out of fermenter space as i have a surprise "wild" fermentation project going on in another, and my big boy is getting used up for a Hazy Rye NEIPA im brewing up today!
