I had some strawberries that were about to turn bad and feeling still like brewing(i cooked up my first batch of 'all grain' beer ) I pureed the strawberries added to a pot added leftover bags of this and that berries from the freezer. Added about 4 cups of sugar, 2 or 3(I didnt measure exactly) tablespoons of coco and a tad more cinnamon then what i added of coco.

I boiled this up and let it boil for about half hour cooled it off and threw in my yeast a bag of black tea opened and one and a half lemons worth in juice and a handful of raisins, my meter said itd be about 10-12%
Now a week later i used my reusable coffee filter to pick up all the 'chunks' have it sitting again so i actually can rack it to rid of the 'lees'

I think it tastes alright now little to much cinnamon but that and the coco im thinking is masking the alcohol taste

Anyways my question is does any one have an idea on how long this will take to clear up and or age so its not just me thinking my frankenwine taste good?

It may take a while to clear. Coco I hear is really hard to get out of suspension. So may take 6 months to a year with racking every 2-3 months to really get this crystal clear.

For aging I find the more flavors involved the longer the aging time for the wine to become mature. So I say minimum one year to two years before this wine peeks. But then again at 6 months this wine may be so good you never let it get to peek. That is a hard part about this hobby.

It takes as long as it takes.

Winemaking is for the patient and lazy.

You have cinnamon and chocolate, as well as boiled fruit. I wouldn't be looking at a totally clear wine anytime this year to be honest.
So you pureed some of the fruit and boiled it with the other fruit. Did you add any pectic enzyme? Hopefully so, otherwise it will never clear out.

So small update after reading and deciding I didn't want to invest any money in kitchen sink wine I waited for the fermentation to stop and decided that the cinnamon masked enough of the harshness to make this a camping drink and bottled it in my classy plastic bottle.
Thanks for the help guys I've purchased some of tablets now for the future.

So kinda awesome find i totally forgot about this guy in my garage found and though it didnt clear up tasted pretty good for what it is. I actually plan on making more of this
