I want to start brewing 1 gallon batches in my mancave. The problem is it's above my garage, and I can't put a stove up there, and I don't want to use a propane burner inside. What should I use? Does anyone use those mini electric burners? I would think they might be too small to boil over a gallon of wort.

I'd recommend installing a fire pole down to the garage and putting a stove in the garage.

But seriously, not sure what options would work for you. Looks like you just started, where did you brew your first couple batches?

I also brew small batches and am very glad we just moved to a place with a gas range. On the previous electric stove it was a pain to get 2 gallons of wort up to a boil.
 
I usually brew in the kitchen, I would just like to brew in the mancave when it gets warmer. Can't brew large batches up there, so just wanted to see what options there are for a smaller heat source

Induction brewing for sure, or you could go with the heatstick route.

Either way you'll be looking at electric brewing, so head over to that sub-forum and take a look around. There's a great thread from Sammy33 where he's outlining his 2.5gal system (he's also a 1gal brewer, just like myself), and his thread definitely shows the power of that option:
