Does anyone know what yeast they use at the Southern Tier brewery? I ask because I'm curious to know how they get the super sweet, cookie-like flavor in their higher alcohol beers. It could be massive amounts of caramel malt, but I also wonder if it isn't the yeast.

I've enjoyed both the Pumpking (pumpkin beer) and Iniquity (black IPA) and both tasted like they had added some gingersnap cookies to the batch. I'm wondering what causes that taste?
