Question about krausen

I have had my cider in the primary bucket for about two weeks. I used us-05 an Fermentation seems to be finished (no more bubbles). Yet, when I open the bucket it has what appears to be a foamy krausen still on top. I was wondering if anyone has experienced this with US-05 and should I wait for it to fall before bottling?

I'm curious about this as well as mines been in just over two weeks and although still bubbling it is very little. Does the krausen dropping and settling mean its ready to bottle?

No they don't always drop. as a matter of fact its better to leave out the kruesen since it will contain some oils and acids that impart off flavors in finished brew. your brew is perfectly fine.

its ready to bottle when you have a steady gravity reading for three days…
 
Taking a reading is difficult as its in a demijohn

I would have to pour it out into the tube and probably bring or at least disturb, the krausen

Can you fit a wine thief in? What about using a carboy cap with sanitary filter and racking cane to "push" the sample out via positive pressure.

the wine thief is just a big a straw that you plug one end and its hold liquid while you transfer to hydrometer container… if you don't have a thief use your siphon and siphon some out…
