I've got 5 gallons of cider in secondary that's about 2 months old (3 weeks in primary, 5 weeks in secondary).

Started with 5 gallons Lewisburg cider, added 2 cans of FAJC. OG was about 1.056. I'm going to break into smaller batches and rack to tertiary where I'll let it age for a good long while. I've got some different recipes in mind, but here are my questions:

-If I'm going to add vanilla extract, how much should I use per gallon? I actually made homemade vanilla extract using 10 split vanilla beans and 750ml local vodka. It has been aging for months and is ready to use.

-If I want to use black tea, how much should I use per gallon?

Thanks!

The answer to both could be... depends. You could add the extract and the tea to taste at racking time. Get an 8 oz glass of the cider, and add small amounts of vanilla extract at a time until it tastes good. Then scale up for the rest of the batch.
