PWM speed controlled stirplate. Question about parts.

Hello

I'm putting together a shopping list for a stir plate build I want to make. I already have a 12v CPU fan and a 5v power supply. Could I use this PWM to control the speed of the fan?

I would also like to have an on/off switch. How do I determine campatibility with the other components?

Maybe I shoud add, that I brew small batches of 2.5 gallons, so my biggest starters will probably be around 2L. Probably closer to 1.5L normally.

I have not used that one, but I see no reason it wouldn't work.
I've been using these dimmers and they are just great.
 
The pcb is attached with screws to the bottom half of the casing and the pot is fastened on the top half through a hole. Wires from the pot, with a connector, to mating connector on the pcb.
Disassebles nicely, very hacker friendly :)
