Has anybody tried doing this? If so would it be best to steep in carboy? Roasted or unroasted? And what would be the best way to sanitize them? Soak in vodka?

Roasting would serve to sanitize them.

I don't have a clue about the best way to use them.

I can't think of any beneficial flavor you will get from them. Are you shelling them or using them fresh/whole from the pumpkin?

I would be using fresh seeds from pumpkins we're about to carve. It was just a thought. Wanted to see if there were any flavor possibilities from them

Doesn't mean it won't add flavor, I just couldn't think of any. I would have thought the outer shells may give off the dreaded tannins

There is a basic brewing video where they roast them and crush them. They then add them to the mash to add a roast flavor. It seems interesting.
