Does anyone know how to put toasted pumpkin seeds into an all-grain recipe? I'll be mashing them with the grain bill, so I expect the starch to be converted. But I can't find any information on the PPG or maximum % extract for pumpkin seeds, and so I don't know how to predict their affect on runoff gravity.
 
Without testing them, it's just a guess. Pumpkin seeds are pretty meaty, I guess similar to barley.

What % of the mash will be pumpkin seeds?

I would be sure to crush them well to expose the inside, since the are so flat the might slip through a roller mill.
 
Unless you are using like upwards of a pound, I would just ignore any contribution they make to the OG

But also at that high %, I would think youd run into issue with the oils
