Pumpkin Pie Ale recipe help

So, I just went to my LHBS today and we worked together a recipe I was looking for some more input.

Before I give the recipe I have a thought on the pumpkin that I was wondering if anyone would know. So I am going to use 6 pounds of pumpkin (5 gal batch) and I'm going to put it in a pan in the oven at 400 degrees for 1 hour. I'm going to coat it in 1 lbs. of honey before I put it in the oven. I would think that at that time and temperature that a lot of the honey would caramelize and therefore the yeast wouldn't be able to eat all of it.

Also my other question is for the spicing of the beer. I want an in your face pumpkin pie flavor. I was thinking cinnamon, nutmeg, allspice, clove. I just don't know how much and when.

Anyways here's my current recipe

Fermentable
---------------
Pale 2-row malt 7lbs. 8oz.
Biscuit Malt 12oz
Crystal 60 12oz
Carapils 8oz
Honey 1lbs.

Hops
---------------
Fuggles 60 min .5oz
Fuggles 30 min .5oz
Fuggles 5 min 1oz

Yeast
---------------
Notingham Dy yeast


ABV: 6.3%

6 pounds of pumpkin? In a 5 gallon mash????? :drunk:
 
Well, I used 60oz of pumpkin in my pumpkin ale last year (3.75lbs) and I added 1tsp cinnamon, 1 tsp nutmeg and 1/2 tsp cloves with the aroma hops at the 3 min mark. With the pumpkin at the 6 min mark. Even though I loved my recipe and the results, I could def. see how adding another 30 oz or so (~1lb) more would def have added even more of a taste of pumpkin flavor to it. Plus aging it even longer would def. have helped. I'd say 6 is def alot, but not out of the realm of possibility, but I think its close to overdoing it, lol.
 
Has anyone ever experimented with using a little chocolate malt in a pumpkin brew to give it another layer of flavor? I am thinking about doing this soon but may stick to straight pumpkin ale if there are any horror stories.
