Hey Guys,

Just got all the stuff to make a killer IPA over the weekend. The wife's birthday is on Sunday and she's been DYING to have a Pumpkin beer this fall. I'm not a huge fan, but since it's her birthday weekend, I'm thinking of doing it to be a nice guy (and to get her off my back).

The original recipe breakdown goes like this:
8# 2-row
3# Munich Dark
1/2# Crystal
1 oz NB - 60
2 oz Williamette - 30
1 oz Cascade - 10
1 oz Cascade - Dry Hopped
CA Ale WLP001

I'm thinking of just throwing a few # of pumpkin puree in the mash and some spices (cinnamon, all spice, basically whatever you would put in a Pumpkin Pie) in the last 5-10 minutes of the boil.

What do you think? Recipe for disaster? I know the IPA will be good on it's own, because I've made it a few times, so I'm torn on doing this...
 
I accidently did a overly hopped pumpkin ale, from the cloves and bitterness of the beer was a little to much for me. But without the cloves I would go for it.
 
See if you can find a clone recipe for OFallon's. I personally would never drink anything like that, but I hear people (mostly women) rave about it. Good luck!
 
Yeah I'd say back off on the bitterness even though it's so defining for IPA. Those spices can be harsh if the beer's too bitter.

Brooklyn Brewery's Post Rd pumpkin ale is an example of a pumpkin spiced beer that's too bitter and harsh to me.

However, Smuttynose makes a pumpkin beer with some pronounced hop flavor and aroma that's really enjoyable! Check it out for some reference.
