Doing a pumpkin beer with fresh pumpkin. The recipe I have says to throw the baked pumpkin chunks into the boil, which is happening now...

My question is... Do I ferment with the pumpkin chunks in the Wort??

There is no need to ever strain a wort. Everything will settle into the trub. There is a benefit to less trub loss if there is less trub, but you will produce a very fine beer either way. I personally like pumpkin in the mash, but you are clearly past that point.

Also, there shouldn't be chunks. If you properly roasted it, it will be pretty dissolved into the wort.

I cooked my pumpkin and got 8 pounds of pumpkin "meat". I added it to the mash. This years will bet about 10 pounds and cooked longer to caramelize it some more.

Yea, I'm about 40 mins into the boil and its dissolved except done stringy pieces. Going to just keep it in.

Thanks!!
